Rempah was born from a simple conviction: Indonesian cuisine is one of the world's great culinary traditions — complex, layered, deeply regional — and it deserves to be celebrated with the same reverence as any cuisine in the world. We honour the classics while giving them room to breathe.

Chef Bayu Santoso grew up in his grandmother's kitchen in Yogyakarta, learning the patience required to make a proper gudeg and the precision of grinding fresh bumbu from scratch. After training in France and working across Southeast Asia, he returned to Indonesia with one mission: to give Indonesian cuisine the platform it deserves.
